Ingredients:

Servings per recipe : 2

·      One finely chopped Apple

·      1 cup Blanched Spinach

·      ¼ cup apple cider vinegar

·      ½ cup fresh basil

·      1 lemon

·      2 tbsp olive oil

·      1 cup pre-cooked quinoa

·      4 walnuts – chopped

·      5 raisins – chopped

·      Handful mix seeds – sunflower, chia, pumpkin, flax

·      Salt and pepper to taste



Instructions:

1.     To the pre cooked quinoa, add chopped apple, blanched spinach and basil leaves.

2.     Add walnuts, raisins and seeds to the above mixture.

3.     Drizzle with olive oil and lemon drops, add salt and pepper to taste. Toss to combine.
